Healthy Vegan Blueberry Zucchini Muffin Bars

Description

These Healthy blueberry zucchini oatmeal bars make a great quick and healthy breakfast or healthy snack. They are oil free, vegan, gluten free and sweetened only with fruit making them refined sugar free!

Ingredients

Dry Ingredients:

  • 6 cups Oat Flour
  • 2 cups rolled Oats
  • 2 teaspoons Baking Powder
  • 2 teaspoons Baking Soda
  • 1 teaspoon Sea Salt
  • 3 medium Zucchini’s, shredded (about 3 cups)

Wet Ingredients:

  • 2  1/2 cups Apple Sauce
  • 2 tablespoons ground flaxseeds
  • 2 tablespoons Apple Cider Vinegar
  • 1/4 cup water
  • 1 large handful dried Cranberries
  • 1 cup chopped pitted Dates (or date pieces)
  • 6 dried Apricots, chopped (or favorite dried fruit like pineapple)
  • 4 cups + 1/2 cup for topping – frozen Blueberries
  • 1/2 cup + 1/4 cup for topping -frozen or fresh sliced Strawberries

Instructions

  1. Preheat oven to 350
  2. In a medium bowl combine all wet ingredients (reserving 1/2 cup blueberries and 1/4 cup strawberries for topping), set aside
  3. Whisk dry ingredients (minus zucchini) in a really large mixing bowl.
  4. Add shredded zucchini and mix with hands until the zucchini is completely covered in flour
  5. Dump the wet ingredients into the dry ingredients and use your hands to mix everything together really really well.
  6. Line a 14”x10” (or similar sized) pan with parchment paper
  7. Transfer dough into lined pan and press it firmly to form evenly and smoothly into the pan
  8. Top with the remaining frozen berries
  9. Bake (convection if possible) at 350F for 45 minutes
  10. Remove from oven and cover with tin-foil while cooling for at least one hour before cutting.

Cut once cooled into bar sized of choice, I cut 20 bars out Eat immediately or store/freeze* for later

Notes

Makes 20 bars- meant to freeze for later, meal prep, or feed a family To freeze, either wrap bars individually prior to freezing or freeze in a Tupperware Freeze for up to three weeks Keeps in refrigerator 5-6 days in an airtight container
