Healthy Vegan Chocolate Cake

Description

This chocolate cake is super moist and rich while being gluten free and vegan. It is super easy to make and uses sweet potato to create its decedent texture and healthy twist!

Ingredients

Dry Ingredients:

  • 2 cups Oat Flour
  • 1/2 cup Cocoa Powder
  • 1/2 cup Mini Dark Chocolate Chips (dairy free)
  • 1/4 cup Date sugar or finely chopped dates
  • 1 1/2 teaspoons Baking Powder
  • 1 teaspoon Baking Soda

Wet Ingredients:

  • 1 1/2 cups cooked, mashed Sweet Potato (I used yams)
  • 2 ripe Bananas
  • 1 cup Water
  • 1/3 cup Maple Syrup
  • 2 tablespoons Balsamic Vinegar

Chocolate Peanut Butter Frosting

  • 2 cups cooked, mashed Sweet Potato (I used yams)
  • 1/2 cup Cocoa Powder
  • 1/2 cup Peanut Butter or Nut/Seed butter of choice
  • 1/2 cup Maple Syrup
  • Splash of non-dairy milk if necessary*

Instructions

  1. Preheat oven to 350F
  2. Mix together dry ingredients in a medium mixing bowl or kitchen-aid mixer
  3. Blend together wet ingredients until smooth
  4. Pour wet ingredients over dry and mix by hand or with a mixer until well combined
  5. Prepare two round 8-9” cake pans by spraying lightly with cooking spray
  6. Pour the batter evenly between the two pans
  7. Bake for 25 minutes at 350F (convection if possible).
  8. Remove from oven and allow to cool completely before removing from pan and frosting

For the frosting:

  1. Blend all ingredients together in a high-speed blender (vitamix) with tamper until a super thick, creamy and smooth frosting has formed.
    • (It may be necessary to add a splash of non-dairy milk to allow the mixture to really blend)
  2. Frost cake as desired, making one double layered cake as I did (see video) or making two single layer cakes.

Notes

Keeps in the fridge for 7 days

I have used Almond Butter, Mixed Nut butter, and sunbutter in this recipe and all turned out amazing.
